Thai Peanut Curry Chicken Zoodles

Ingredients

  • 2 large zucchini
  • 1 can Lite Coconut milk
  • 2 Tbsp Red Curry Paste
  • 2 Tbsp low sodium crunchy peanut butter
  • 2 Tbsp low sodium coconut aminos
  • 2 6oz chicken breasts

Directions

  1. Prepare zoodles with veggetti or spiralizer  per instructions in the package.zucchini-pasta-noodles
  2. Boil 2 cups water and pinch of sea salt in a pot and quick boil until tender but not soft.
  3. In a separate pan, cook chicken through, add coconut milk, peanut butter, curry paste and liquid aminos.
  4. Add zoodles and allow to simmer for 5-10 mins. You can add basil or mint as well for garnish.
