Thai Peanut Curry Chicken Zoodles
Ingredients
- 2 large zucchini
- 1 can Lite Coconut milk
- 2 Tbsp Red Curry Paste
- 2 Tbsp low sodium crunchy peanut butter
- 2 Tbsp low sodium coconut aminos
- 2 6oz chicken breasts
Directions
- Prepare zoodles with veggetti or spiralizer per instructions in the package.
- Boil 2 cups water and pinch of sea salt in a pot and quick boil until tender but not soft.
- In a separate pan, cook chicken through, add coconut milk, peanut butter, curry paste and liquid aminos.
- Add zoodles and allow to simmer for 5-10 mins. You can add basil or mint as well for garnish.
