Ingredients

(2 servings)

  • 3 medium zucchini (spiraled w/veggetti)
  • 10 med cooked shrimp
  • 5-10 basil leaves (chopped)
  • 1 tbsp olive oil (I prefer a  Lemon or Lime Fused Olive Oil found in this link)
  • 2 tsp apple cider vinegar (Or fused Vinegar)
  • Juice of 1 lemon
  • 1 Tsp Cracked back pepper (or to taste)
  • 1 Tsp no sodium lemon pepper (or to taste)

Directions

  1. Spiralize 2-3 Medium zucchini depending on size.
  2. Rinse, cut and place in a large bowl.
  3. If you prefer grilled shrimp to raw, unthaw, devein, and remove tails from ~10 cooked shrimp.
  4. Add small amount of olive oil to pan (or cooking spray) and add shrimp cooking until desired temperature and texture.
  5. Add shrimp, chopped basil leaves, olive oil, vinegar, and lemon juice.
  6. Mix generously, adding pepper and lemon pepper.
  7. Place in refrigerator for ~15-20 mins and serve chilled.
