Instant Pot Chicken Cordon Bleu

So, my best friend got me an Instant Pot for my birthday and I was so excited about it, but I still hadn’t used it, 2 months later. If you don’t what this is, go check out Instant pot and buy one!  I think I was intimidated by it and unsure of how to use it (it does come with a lot of instructions), so it was sitting on my counter for two months. I have never used a pressure cooker and I have only seen my Grandmother using one when I was little to make beans, and honestly, it always scared me. That sound of the little thing on top shaking like maracas and then that loud whistle I’ll never forget. But,  I found a great recipe on Pinterest and decided to go for it. I am so glad I did! It was seriously, the quickest and easiest meal I have EVER made!

Try it and let me know what you think! You can use a regular pressure cooker or a crock pot if you don’t have an Instant Pot.

 

INGREDIENTS

  • 1 lb. Boneless, skinless chicken breast
  • 1 lb. Cubed Ham
  • 2 cups low sodium chicken broth
  • 2 Tbsp. (or more) Spicy brown mustard
  • 12-16oz Gluten Free Rotini Pasta
  • 1 Cup Panko bread crumbs or brown rice bread crumbs
  • 2 Tbsp Smart Balance Butter
  • 8 oz Fat Free Evaporated Milk
  • 16 oz. Reduced Fat Swiss Cheese

DIRECTIONS

  1. Pour uncooked pasta into Instant Pot (Pressure Cooker)
  2. Cover with 2 Cups Chicken broth
  3. Place this chicken strips and cubed ham on top.
  4. Place on Manual High Pressure for 25 minutes (Or use Poultry Button).
  5. Once done, use Quick Release to release steam.
  6. Pour in Evaporated milk,mustard and cheese and stir until creamy and smooth.
  7. In a small pan, melt butter and add bread crumbs.
  8. Stir until all are toasty and golden brown (~2-3 minutes).
  9. Sprinkle on top of casserole and enjoy!
