Cauliflower Fried Rice Chicken Stir Fry
Ingredients (2 servings):
- 12 oz. package frozen stir fry vegetables
- 2 chicken breasts (4-6 oz. each)
- 12 oz. package frozen Green Giant Riced Cauliflower Medley
- 1 egg
- 1 tsp toasted sesame oil
- coconut oil spray (soy free)
- 1 tsp pepper
- 2-3 Tbsp Coconut Aminos or Teriyaki Coconut Aminos (soy-free, sugar free)
Directions:
- Spray a medium skillet with coconut oil and add chicken. Cook on med-high heat with a lid until ~3/4 cooked through.
- Add frozen stir fry veggies to chicken and cover until veggies are almost fully steamed.
- Remove chicken and shred with a knife and fork. Return to veggie mixture and add coconut aminos and pepper. Cover and place on low heat.
- In a separate pan, add sesame oil and fry Riced Cauliflower Medley on med-high heat until golden brown.
- Add 1 egg to Cauliflower rice mixture and mix in until fried.
- Place fried Cauliflower Rice medley on a plate and add chicken stir fry mixture on top. Add more coconut aminos to taste if needed.
