Whole30 Coconut Curry Shrimp Zoodles

Ingredients (2 servings)

  • 2 medium-large Zucchinis
  • 10 large frozen/cooked shrimp
  • 1 cup Chicken Bone Broth (Use ~3/4 cup if you like less juice)
  • 2/3 cup Lite Coconut Milk
  • 1 tsp Red Curry Paste (more if you would like spicier)
  • 1 Tbsp Coconut Oil or coconut oil spray without soy

Directions

  1. In medium bowl, thaw frozen shrimp in warm water.
  2. While shrimp is thawing, use a veggetti™ to spiral the zucchini (Follow instructions for veggetti).
  3. Add coconut oil or spray to a medium-large skillet on medium heat.
  4. Remove tails and devein shrimp if needed and add to skillet cooking ~1/2 way through for 1 min.
  5. Add broth, coconut milk, and red curry paste and stir all ingredients together until curry paste is mixed in to the broth.
