Whole30 Coconut Curry Shrimp Zoodles
Ingredients (2 servings)
- 2 medium-large Zucchinis
- 10 large frozen/cooked shrimp
- 1 cup Chicken Bone Broth (Use ~3/4 cup if you like less juice)
- 2/3 cup Lite Coconut Milk
- 1 tsp Red Curry Paste (more if you would like spicier)
- 1 Tbsp Coconut Oil or coconut oil spray without soy
Directions
- In medium bowl, thaw frozen shrimp in warm water.
- While shrimp is thawing, use a veggetti™ to spiral the zucchini (Follow instructions for veggetti).
- Add coconut oil or spray to a medium-large skillet on medium heat.
- Remove tails and devein shrimp if needed and add to skillet cooking ~1/2 way through for 1 min.
- Add broth, coconut milk, and red curry paste and stir all ingredients together until curry paste is mixed in to the broth.
- Add zoodles and mix all ingredients together and serve.
