Chocolate Protein Lava Cakes
These were super EASY, I swear!
Ingredients
- 1 scoop chocolate protein powder (I used Muscletech Phase 8)
- 2 Tbsp cocoa powder
- 1 Tbsp coconut flour
- 1 1/2 Tbsp Truvia o zero calorie sweetener
- 1 tsp baking powder
- 1/4 cup unsweetened almond milk or coconut milk
- 2 Tbsp water
- 1 egg
- 1 tsp Vanilla extract
- Pinch of salt
Directions
- Preheat oven to 350
- Mix protein powder, coconut flour, cocoa powder, Truvia, Baking powder, and salt.
- Add milk, water, egg & vanilla & mix well.
- Spray cupcake baking dish with cooking oil & pour into 4 cups. Double recipe or follow instructions to make 4 more, 8 total.
- Bake for 5-6 min. or until tops appear set. (I baked for ~8 min. since I doubled the recipe)
****Keep checking to ensure they don’t over bake! The lava center will harden if overcooked.
Serve immediately & middle should ooze out.
Per serving: 60 Calories, 2g Fat, 2g Net carbs, 8g Protein.
