These were super EASY, I swear!Protein chocolate lava cakes

Ingredients

  • 1 scoop chocolate protein powder (I used Muscletech Phase 8)
  • 2 Tbsp cocoa powder
  • 1 Tbsp coconut flour
  • 1 1/2 Tbsp Truvia o zero calorie sweetener
  • 1 tsp baking powder
  • 1/4 cup unsweetened almond milk or coconut milk
  • 2 Tbsp water
  • 1 egg
  • 1 tsp Vanilla extract
  • Pinch of salt

Directions

  1. Preheat oven to 350
  2. Mix protein powder, coconut flour, cocoa powder, Truvia, Baking powder, and salt.
  3. Add milk, water, egg & vanilla & mix well.
  4. Spray cupcake baking dish with cooking oil & pour into 4 cups. Double recipe or follow instructions to make 4 more, 8 total.
  5. Bake for 5-6 min. or until tops appear set. (I baked for ~8 min. since I doubled the recipe)
    ****Keep checking to ensure they don’t over bake! The lava center will harden if overcooked.

Serve immediately & middle should ooze out.

Per serving: 60 Calories, 2g Fat, 2g Net carbs, 8g Protein.
