Low Carb BBQ Chicken Pork Rind Pizza
Ingredients
Makes 12 2in x 2in square servings in 11×7 baking dish or pan
-1 cup Reduced Fat Parmesan Cheese
-4 eggs
-2 Tsp Mrs. Dash Garlic & Herb Seasoning
-1 7oz. package Fat Free or Reduce Fat Shredded Cheese
-4-5 Tbsp BBQ Sauce (You can add more or less depending on your preference)
-1 cup ground BBQ Pork Rinds (Crush with a potato masher or similar tool until ground as shown here)
-1 lb shredded or cubed chicken (I use a precooked shredded chicken to save time)
Directions
- Preheat oven to 375°
- Spray 11×7 baking dish or baking sheet with non-stick cooking spray
- In a bowl, mix ground pork rinds, eggs, parmesan cheese and seasoning with a fork.
- Pour mixture in to pan and spread out with your fingers. If the mixture sticks to your hands, wet them with water and it will spread smoothly. Form a rectangle and press until ~1/4 inch thick.
- Bake crust for ~20-30 minutes or until golden brown. Flip it 1/2 way through to get a crispier crust.
- Remove and add desired toppings. I brushed the BBQ sauce over the crust, then added cheese, shredded chicken, turkey bacon and more cheese. Place back in the oven for ~10 mins. Turn to broil for ~5 mins until cheese is melted and golden brown.

Great recipe, however if you use full fat cheese, the carb count will be a lot lower! I’m going to try it this weekend.
